Chestnut shochu, called Dabada Hiburi is genuine sake the made from chestnuts (local specialty). Moreover, name Dabada Hiburi comes from two traditional words in Shimanto river. A gathering place is called “Daba” in Shimanto, and the traditional fishing method using fire is called “Hiburi.” Therefore, the sake is called Dabada Hiburi.
